Ingredients:

  • 2 large ripe bananas, mashed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1 cup chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the mashed bananas, eggs, and vanilla extract to the butter mixture, and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

    • 1/4 cup chopped pecans
  9. Sprinkle the streusel topping over each muffin.
  10. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
